Blueberry Butter Cake

Lynn demonstrates a Blueberry Butter Cake made with dried blueberries.  This is great for dessert or snacking.  Dried Blueberries can be found at Costco.  This recipe is from the Costco cookbook.

Bottom Layer:

  • 1 package yellow cake mix
  • 1 egg
  • 8 Tablespoons butter, melted


  • 8 ounce cream cheese softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 Tablespoons butter, melted
  • 15-20 ounces dried blueberries
  • 2 cups confectioners' sugar

Preheat oven to 350°.  Lightly grease a 9x13” baking pan and set aside.

Bottom Layer:
In a mixing bowl, combine the cake mix, eggs and melted butter.  Mix with an electric beater.  Put the mixture into the bottom of the prepared pan.

In a large bowl, beat cream cheese until smooth.  Add eggs, vanilla & melted butter.  Beat again until blended.  Stir in dried blueberries & sugar and mix until well blended.

Spread the filling over the cake batter.

Bake for 40-50 minutes.  Do not over bake!  The center should be a little gooey.  Serve at room temperature.

6-8 servings
